Your Enclave is under warranty. Whenever I've had questions like yours, I've gone to the dealer and gotten immediate answers. If your problem is not a normal condition or operator error, it's going to require repair by the dealer, anyhow. Why don't you have them take care of it? They will give you a car to drive while the problem is being corrected, if necessary.

Yep... That's what the warranty & dealer are there for...

What was the dealer fix? Currently have an 2008 enclave doing the same thing. No warranty and really do not want to take to the dealer.

and youre sure no one touched the override button on the dash?

I have the same probable and I am aware of the override switch to the left of the steering wheel it is not that. Just to surmise:
My interior lights work manually but they do not turn on when I unlock the car or open the door.
I have checked and rechecked the toggle next to the dimmer switch, that is not the issue unless the switch is bad.
I am not under warranty so I'm really hesitant about bringing it to the dealer.
Has anyone resolved this, or know how their dealer resolved it?

Have you checked the DIC menus for approach lighting when unlocking? Have you checked the correct fuse, behind the glove box outer footwell?
