Even though I'm probably months away from delivery, I've been checking out some accessories. Does anyone think, or actually measured, that this 8 1/2" wide 12V cooler would fit between the second row captains chairs?

I just took some measurements...

The minimum width between the second row buckets seems to be 12" so the width should be fine.

The minimum clearance under the second row armrests in the down position is less than the 16" height of the cooler. However, the cooler can probably be slid forward of the second row armrests IF the front seat adjustable console is slid forward. In the rear position of the front console I do not think you would be able to put the second row armrests down if the cooler were there.
